The roots can be eaten all year long and dug out of frozen soil in perfect condition. Can be an aggressive spreader so plant away from a veggie garden where it can be controlled more easily. A few tubers will quickly multiply into hundreds and can be planted/spread to other locations for further growing. Late flowers on top of 8-12ft tall stems. Tolerant of a wide range of soils.
